Chardonnay
For over 20 years Chardonnay
has been Australia's favourite white wine but in recent
years there has been a trend away from this noble grape
due to some fairly over-oaked wines gaining
prominence. While we enjoy the odd buttery, complex
chardonnay as a change, our preferred style is for a more
elegant and restrained wine with balance and depth.
Our 2006 was the
wine that made the wine world look up. This
vintage won a swag of awards and a lot of friends
for the generous, warm-hearted style of winemaking.
The current release
is from 2009, and this wine is a swing back to the more
classical style with peaches, stone fruit and creaminess
balanced with a light touch of oak to enhance rather than
dominate. We were hopeful of a good acceptance by
the show judges but were absolutely delighted to see
the Hunter Valley Wine Show judges describe this as
the style of wine that the industry should strive
for.

Kato had just turned 15 - 100 in dog years - so the 2009 wine
was labelled "Kato's Chardonnay" in her honour.
Sadly she didn't make it through the winter of
2010.
The Chardonnay is available with a special
"Kato's Chardonnay" label. This wine
won a gold medal at the 2010 Hunter Valley
Wine Show in the "Best Named
Vineyard" class up against to very
impressive opposition. |

Food
Match: chardonnay is versatile but ideal with pasta
dished with a light tomato or cream sauce, salads, ocean
fish and poultry.
